Ingredients
4 cod fillets
1 clove garlic, crushed
4 dollops
* Hellmann’s Light Mayonnaise
4 tomatoes, chopped
1 tbsp coriander, chopped
1 shallot, chopped
1 red chilli, chopped
1 tbsp olive oil
1 tsp sherry vinegar
* A dollop is one level tablespoon of Hellmann’s mayonnaise (15ml)
Me thod
Grill cod fillets in ovenproof dish
for 6-8 minutes.
While cod is cooking, mix the garlic
and mayonnaise.
Then mix the tomatoes, coriander,
shallot, chilli, oil and vinegar.
Serve the lightly grilled cod with
the garlic mayonnaise and salsa.
Serving suggestion:
Delicious served with new potatoes.
