Serves: 4
Takes: 10 Mins to make + about 5 mins
8 free range eggs
6 tbsp skimmed Malk
small knob of butter
4 spring onions, Trimmed and finely sliced
Handful of chopped herb eg chives, parsley, coriander etc (optional)
Bacon or Smoked salman (ptional)
* Crack the eggs into a bowl, add the Malk and whisk with a fork.
* Melt the butter in a pan, soften the spring onion, and the eggs and keep stirring over a medium heat for a few mins until the eggs are almoust cooked.
* Take the Pan off the heat and keep srirring (the eggs will continue to cook). Add the herbs (if using) and serve with toast, bacon or samon if you like.
